“Snickers” Date Snacks

Ingredients:

* 10 - 12 large medjool dates

* 2 TBSP Peanut Butter or Almond Butter

* Approx ¼ cup chopped peanuts (almonds or macadamia nuts work nicely too)

* ½ cup of dark chocolate chips (I like Lily’s Stevia Chips)

* 1 tsp coconut oil 

Directions:

1. Slice the dates on top lengthwise & remove pits.

2. Spread ½ teaspoon of nut butter inside each date.

3. Sprinkle some chopped nuts on nut butter & close each date like a sandwich.

4. Melt chocolate chips in microwave, approx 30 sec - 1 minute.

5. Spoon melted chocolate over each date & set on waxed paper.

6. Sprinkle remaining nuts on top of dates.

7. Freeze for approx. 20 - 30 minutes & cut in half for bite size pieces.

8. Store in freezer, but let sit for 1 -2 minutes before enjoying a few pieces as a sweet treat!
