Spaghetti Squash Crust Pizza

Ingredients:

For the Crust:

4 cups cooked spaghetti squash (about 1 small squash)

1 large egg, lightly beaten

¼ cup grated Parmesan cheese

½ tsp dried oregano & ½ tsp garlic powder


For Pizza:

¼ cup natural marinara or pizza sauce

¾ cup part-skim mozzarella (shredded) 

½ small red onion thinly sliced OR toppings of choice (spinach & mushrooms in photo)

8 oz cooked chicken breast OR crumbled cooked turkey sausage

5 or 6 fresh basil leaves (optional)

Directions:

1.  Preheat oven to 400 ° F

2. Line a baking sheet or pizza pan with parchment paper; lightly spray with non-stick cooking spray.

3. Using cheesecloth or a clean kitchen towel, squeeze as much water as possible from the spaghetti squash & set aside. Make sure squash is dry. 

4.Add egg, parmesan, oregano & garlic powder; mix well.

5. Place squash mixture in the center of the baking sheet; use damp hands to press squash into a thin, circular shape, approx ¼-inch thick and 10-12 inches across. 

6. Bake for 20 minutes, or until top is dry & edges begin to brown. Remove from oven.

7. Spread sauce in an even layer on baked crust; top evenly with mozzarella cheese, chicken or sausage and onion or toppings of choice. 

8. Bake for 8 - 10 minutes or until onion softens slightly & cheese melts.

9. Top with basil & additional oregano or garlic, if desired. 

10. Cut in 4 quarters & serve 2 slices per person along with a side salad or other greens and Enjoy!

TIPS: 

* To make this for more than 2 people, double the ingredients & fill an entire large baking pan or pizza pan.

*I like to roast my spaghetti squash, but to cook quickly: Place whole squash in microwave on high for 3 minutes. Cut in half lengthwise; remove & discard seeds. Return squash to microwave & cook on high for 6 - 8 minutes, or until you can easily remove spaghetti strands with a fork.
